    I love fennel and grew up with this Mediterranean plant. I love it raw as a snack or in my Fennel-Cucumber Bites, or cooked, like in my Braised Fennel Recipe—I'm a fan. 

    Its natural sweetness and subtle aniseed flavor pair perfectly with celery and tropical pineapple. This fennel juice is incredibly hydrating, an excellent source of vitamin C, and has numerous health benefits that support everything from digestion to boosting the immune system. Let's make it!

    • Fennel Bulb: Use the bulb and the long green stalks or feathery leaves—nothing gets wasted. 
    • Celery: Celery is great for hydration and is rich in vitamins and minerals. It pairs wonderfully with fennel. Get extra to make my Celery Pineapple Juice.
    • Pineapple: This tropical fruit is another great source of vitamin C and adds natural sweetness, which balances out the slightly savory taste of the fennel and celery. The pineapple’s enzymes also aid in digestion, making this juice even more beneficial for gut health. Use any leftovers to make my Pineapple Banana Turmeric Smoothie or Pineapple Cucumber Smoothie.

    • Use Fresh Organic Produce: Use fresh vegetables and fruit from organic produce whenever possible to get the best fennel juice.
    • Best To Consume In the Morning: Drink the juice on an empty stomach for better absorption of nutrients.

    • For a Sweeter Taste: Add green apples or more pineapple.
    • Switch Up The Flavors: Citrus fruits like oranges or grapefruits are also a great substitute for switching up the flavor.

    Store the juice in a large mason jar or pitcher with a lid in the refrigerator. It’s best to consume it within 48 hours for the freshest taste and maximum nutritional benefits.

    What’s the best time to drink fennel juice?

    For optimal digestion and hydration, I recommend drinking it on an empty stomach first thing in the morning.

    Can I use a nut milk bag to strain the juice? 

    Yes, if you don't have a slow juicer, use a high-speed blender and a nut milk bag or strainer to strain any pulp from the juice. You can see step-by-step pictures of making my Carrot Orange Ginger Juice.

    Fennel Juice With Celery And Pineapple

    Equipment

    • 1 Slow Juicer I love Hurom (or any slow juicer)
    • 1 Mason Jar or Pitcher  (for storing the juice)
    • 1 Juicing Strainer or Nut Milk Bag (optional, if not using a juicer)
    • 1 high-speed blender (optional, if you don’t have a juicer)
    Servings 1.5 liters, about 6 ¼ cups

    Ingredients
     

    • 1 large celery stalk (the whole bunch or head) 840 grams
    • 2 large fennel bulbs with its stalks 860 grams
    • 2 ¾ cups peeled and chopped fresh pineapple 595 grams

    Instructions
     

    • Slice the fennel (bulb and stalks) and celery into 2-inch chunks. Cut the skin off the pineapple and cut it into small chunks.
      1 large celery stalk (the whole bunch or head), 2 large fennel bulbs with its stalks, 2 ¾ cups peeled and chopped fresh pineapple
    • Add the ingredients to your juicer and juice. When your juice container is full, close the juice chamber and transfer the juice to a large mason jar or pitcher with a lid. Place the juice container again under the juice chamber and open it to catch the remaining juice.
      See note if you don't have a juicer.
    • After you have juiced all the produce and transferred the juice to your large pitcher, stir everything to distribute the flavors.
    • Serve and enjoy!
