It's a perfect blend of healthy ingredients that brings out a creamy mousse much thinner than regular pudding but just as satisfying.

You only need a few basic ingredients to make this delicious blended chocolate chia mousse.
- Coconut Milk: Cashew or almond milk are great alternatives.
- Chia Seeds: You need about 6 tablespoons.
- Cacao Powder: Unsweetened cocoa powder is a great alternative.
- Cinnamon Powder: A little bit complements the chocolate flavor.
- Sweetener: Powder Monk Fruit sweetener is preferred, but feel free to use pure maple syrup as an alternative.

Step One (Picture 1 above) - Combine cacao, cinnamon powder, and sweetener in a medium bowl.
Step Two (Picture 2 above) - Stir in the milk and whisk until well combined.
Step Three (Picture 3 above) - Stir in the chia seeds.
Step Four (Picture 4 above) - Ensure that the seeds are well combined and incorporated into the chocolatey liquid. Pour the mixture into an airtight container and refrigerate for a couple of hours or until it thickens to your liking.
Step Five (Picture 5 above) - Add the thick chia seed mixture to a high-powered blender and add a tad of extra milk (no need if using cashew milk).
Step Six (Picture 6 above) - Blend the thick chia chocolate mixture until you achieve a smooth and creamy texture.
Serving Suggestions
Serve chilled with :
- A dollop of coconut cream (try also my coconut lemon chia pudding).
- Dark chocolate shavings or coconut flakes.
- Fresh berries or bananas (try also my banana chia pudding).
- Crunchy nut-free granola or steel-cut granola oats.

Smooth Blended Chocolate Chia Mousse

Ingredients
- ¼ cup cacao powder (25 grams) or unsweetened cocoa powder
- ½ teaspoon cinnamon powder
- 5 tablespoons powdered Monk Fruit sweetener (or maple syrup—see note)
- 1 (13.5 FL oz/398 ml) can coconut milk or 1 ½ cup/350 ml cashew milk (a bit extra if needed—see instructions)
- 6 tablespoons chia seeds 65 grams
Instructions
- Combine cacao, cinnamon powder, and sweetener in a medium bowl.¼ cup cacao powder (25 grams), ½ teaspoon cinnamon powder, 5 tablespoons powdered Monk Fruit sweetener
- Stir in the milk and whisk until well combined.1 (13.5 FL oz/398 ml) can coconut milk
- Add the seeds. Stir until well combined and the seeds are well incorporated into the chocolatey liquid.6 tablespoons chia seeds
- Place covered in the fridge for 1 to 2 hours or overnight (best for meal prep). The chocolate chia pudding will thicken in the fridge.
- Place the thick chocolate mixture into a high-speed blender. Blend until smooth and creamy. If you've used coconut milk, you can opt to add ¼ cup extra milk to obtain a thinner consistency (optional). You don't need extra milk to blend if you've used cashew or any other nut milk.
- Enjoy with your favorite toppings, such as blueberries and coconut shreds, or store in the fridge for up to 5 days.
Notes
- You can double or triple the recipe for a larger crowd.
- You need a high-speed blender. The amount of ingredients should be enough to allow the blades to properly blend.
- Taste test the sweetness. Usually, 5 tablespoons of powdered Monk fruit sweetener gives you a lovely subtle sweetness. Only add more if needed.
- If preferred, use maple syrup as a sweetener instead. Start with 3 tablespoons and taste test. Add more only if needed.
- For garnishes, use fresh berries, coconut flakes, chopped nuts, or crunchy steel-cut granola oats.
