- Cold brew coffee: Use store-bought or make my cold brew coffee recipe. It's regular coffee beans soaked for 12-24 hours and then strained. It's a smooth coffee concentrate with less acidity than regular coffee, so it's easier on the tummy. And it lasts almost a week when stored in the fridge.
- Cashew milk: I prefer unsweetened vanilla cashew milk because it adds a lovely nutty flavor to the already naturally sweet and creamy milk.
- Ice cubes: Pouring your cold brew latte recipe over ice cubes will add that extra chill, enhancing its refreshing quality.
- Dates: Very soft pitted (Medjool) dates add a heavenly caramel-like taste. Blend one to two dates with cashew milk in a high-powered blender until completely pulverized.
- Sea salt: A pinch of salt nicely balances the sweet flavors. It is the same when you add a tad of salt on top of peanut butter cookies—ever done that? Then you know what I mean.
- Peanut butter: Add a tablespoon to the sweet milk blend—reminiscent of a peanut butter latte or coffee smoothie. And it goes well with caramel-tasting dates.
Note: When you make your own cold brew coffee, you can double the recipe and keep a big batch in the fridge for up to one week. This is perfect if you have a lot of coffee drinkers in the house. Let's make your cold brew latte. This concoction tastes like a thicker, salted-caramel coffee, but it's the healthier version.

Step One — Blend the cashew milk, salt, dates, and peanut butter until smooth and frothy. Set aside.
Step Two — Pour the cold brew concentrate into a tall glass over ice.
Step Three — Fill the glass with the sweet milk mixture to the top.
Step Four — Stir well to combine and enjoy your cold brew latte.

- Chill the milk: To maintain that perfect iced nature of a cold latte, chill the milk before adding it to the cold brew concentrate and ice.
- Coffee-to-milk ratio: I measure about ½ cup of flavored milk per cup of coffee because I like it that way. But feel free to make yours lighter or stronger by adding less or extra milk.
- Make cashew milk ice cubes in advance: Cashew milk freezes well and pops easily out of ice cube trays.

Variations & Substitutions
- Sweetener (optional): A tad of brown sugar, honey, agave nectar, maple syrup, simple syrup, vanilla syrup, and monk fruit sweetener can be added for a sweeter flavor.
- Alternative flavorings without sugar:
- Use unsweetened vanilla plant milk instead of plain.
- Add a touch of cinnamon powder.
- Add cocoa or cacao powder for a more chocolatey flavor (or flavored collagen powder, my favorite).

Ingredients
- 2 Medjool dates
- ½ cup cashew milk (or almond milk) about 120 ml
- 1 tablespoon unsalted peanut butter (optional)
- 1 pinch of salt
- Ice cubes (see notes)
- 1 cup cold brew coffee (see notes) about 240 ml
Instructions
- Place dates, milk, peanut butter, and salt in a blender. Blend until all the dates have completely disintegrated and you have a sweet, frothy milk mixture. Set aside.2 Medjool dates, ½ cup cashew milk (or almond milk), 1 tablespoon unsalted peanut butter (optional), 1 pinch of salt
- Fill a large drinking glass or mason jar with a few ice cubes (about 3 to 4). Pour in the cold brew coffee.Ice cubes (see notes)

Notes
- Make Flavored Ice Cubes In Advance: I prefer to serve this cold-brew latte with cashew milk ice cubes. Cashew milk freezes well and pops easily out of ice cube trays. However, you can replace them with coffee ice cubes (freeze some cold-brew concentrate in ice cube trays) for a less diluted latte.
- Cold Brew Coffee: It's so easy to make cold brew coffee at home, and I have an excellent recipe for you on the blog. You can even make yours caffeine-free. However, you can also use store-bought cold brew coffee.
- Creamy Component: You can use unsweetened milk, plant milk, or your favorite cream. I often choose unsweetened (vanilla) cashew milk because it adds a lovely nutty flavor and is already naturally sweet. Almond, oat, or hazelnut milk is a great alternative.
- Coffee-to-Milk Ratio: If you want a stronger latte, use about ¼ cup of milk per cup of coffee. Taste test and find your perfect coffee-to-milk ratio!
- Frothy milk mixture: The dates add a natural, sweet caramel flavor. Blend the dates with the milk using a high-powdered blender until completely pulverized.
- Adjust to taste: I use 1 date per ¼ cup of milk. It's enough to add natural sweetness without losing the coffee flavor. Of course, adjust to taste.
- Pinch of salt: You can, of course, totally omit this, but I highly recommend adding a pinch of salt as it nicely balances the sweet flavors. Go a bit extra fancy, and add a tablespoon of salted peanut butter to the sweet milk mixture—reminiscent of a peanut butter latte or coffee smoothie. This concoction is delicious —like a thicker, saltier caramel version—but still healthier.
- Make more: You can make this cashew milk-date blend in advance and in bulk, then store it in the fridge whenever you want to sweeten your iced coffee.
