    Here's a quick breakfast recipe that's both satisfying and nutritious. Peanut butter cottage cheese toast with fresh berries is the perfect blend of creamy, crunchy, and sweet flavors.

    It tastes incredible but also packs a nice punch of proteins for a sweet cottage cheese toast. Plus, you'll get your peanut butter fix at the same time—ready in 5 minutes.

    Among all the breakfast toasts, this is one of my favorites. It's simple and delicious, like my healthy breakfast with plantains.

    You can change it up in many ways or pair it with hard-boiled eggs for that extra protein. The best part is that it's ready in 5 minutes, which makes it a perfect pre- or post-workout morning bite.

    The creamy cottage cheese pairs wonderfully with the nutty peanut butter (or use chocolate peanut butter when enjoyed as a snack) and fresh berries. All you need is a drizzle of honey for that sweet touch. Let's make it.

    Here's what you need to make peanut butter cottage cheese toast:

    • Hearty bread: I love sprouted grain from Ezekiel, like my Leftover Pot Roast Shredded Beef Sandwich. They have different dietary options. It's also so easy to store in the fridge or freezer. You pop it into the oven. That's it. But choose your favorite whole-grain or gluten-free bread, or try it on my chaffles or sweet plantain waffles. 
    • Peanut Butter: Go for unsalted and unsweetened plain peanut butter.
    • Cottage Cheese: I prefer whole-fat, but fat-free cottage cheese is also fine. I love good cultured cottage cheese or Nancy's probiotic Cottage cheese.
    • Fresh berries: I prefer raspberries for their sweet and tarty flavors.
    • Honey: You only need a drizzle to add a touch of sweetness.

    1. Toast the Bread: Start by toasting 2 slices of Ezekiel bread ( or whole-grain or gluten-free bread of choice) until golden brown and crispy.
    2. Prepare the Base: Spread a generous layer of peanut butter over each piece of toast, followed by a layer of creamy cottage cheese.
    3. Add Toppings: Arrange fresh berries on top of the cottage cheese. Drizzle with honey or maple syrup if desired.
    4. Season: If using, sprinkle with flax seeds or sunflower seeds. Chocolate chips are a great option for enjoying this toast as a snack.
    5. Serve: Enjoy immediately as a sweet breakfast.

    Variations


    There are many ways to switch up this peanut butter cottage cheese toast recipe and make it yours. Here are a few options:

    • Fresh Fruit: Use different fruits like blueberries or banana slices as a topping.
    • Nut Butter: Try crunchy instead of creamy peanut butter—or various nut kinds of butter for a unique flavor, like almond butter or chocolate peanut butter.
    • Sweet option: Try hot honey for a sweet and spicy touch. 
    • Cheeses: Switch it up with ricotta cheese instead of cottage cheese. Or use any leftovers from my seasoned whipped ricotta with honey.
    • Toppings: Sprinkle with extra seeds or nuts on top or homemade granola for that extra crunch, or add a tiny bit of crunchy and toasted steel-cut oats. 
    • Experiment: Try different types of bread, such as sourdough or whole-grain bread. Or a slice of my lupin bread.

    Peanut Butter Cottage Cheese Toast with Fresh Berries is a quick and healthy breakfast idea packed with protein and super easy to make.

    Ingredients
     

    • 2 slices of Ezekiel bread, toasted or any other bread you prefer
    • 2 tablespoons creamy peanut butter, separated
    • 4 tablespoons cottage cheese, separated
    • 1 heaping cup fresh raspberries 130 grams
    • Drizzle of honey

    Instructions
     

    • Spread each toasted slice of bread with one tablespoon of peanut butter. Make sure to cover the corners.
    • Spread two tablespoons of cottage cheese over each toast on top of the peanut butter.
    • Divide the fresh berries on top of the cottage cheese. I use whole berries, but you can crush the berries in advance and top it that way.
    • Drizzle a tad of honey over the berries. A teaspoon per toast should be enough but adjust to taste.

    Variations:
    • Use different fruits like blueberries or banana slices as a topping.
    • Try crunchy instead of creamy peanut butter.
    • Try hot honey for a spicy touch.
    • Switch it up with ricotta cheese instead of cottage cheese.
