    My family's favorite way to use a lot of leftovers from my Dutch Oven Shredded Beef Chuck Roast is by making a quick, satisfying toast sandwich with a sweet and savory flavor.

    Similar to my Savory Leftover Beef Mug Cake, it's the perfect way to turn yesterday’s dinner into today’s delicious, leisurely lunch. We even have it sometimes as a hearty breakfast. Let's make it!

    You can create a savory, satisfying sandwich with just a few simple ingredients in no time! 

    Ingredients to make leftover pot roast sandwich.
    • Bread: I prefer sprouted bread from Ezekiel for extra nutrition, but feel free to use your favorite bread (gluten-free or low-carb options work great, too!). A toasted slice gives this sandwich a golden brown crunch. Check out my Peanut Butter Cottage Cheese Toast.
    • Sugar-Free Jam: The sweet jam contrasts beautifully with the savory beef. I love fig jam, but apricot or my Quick Spiced Apricot Jam can be a great way to add complementary flavors.
    • Leftover Shredded Beef: Tender, flavorful pot roast leftovers, reheat quickly in just a few minutes in a frying pan or microwave using its leftover gravy. It tastes even better the next day, just like my Instant Pot Beef Stew. You can always use a bit of leftover homemade bone broth or any beef broth to heat it and moisten it.

    Quick Leftover Pot Roast Shredded Beef Sandwich

    • 1 Small Fork and Knife optional for serving

    Ingredients
     

    • 1 slice of bread (of choice) optional: toasted
    • 2 tablespoons sugar-free jam of choice (see note)
    • 1 cup leftover shredded beef, briefly reheated

    Instructions
     

    • Spread (toasted) slice of bread with jam. Make sure to cover the corners.

    • Divide the reheated shredded beef over the toast. Serve with small fork and knife and enjoy!

    Tips:
    • Sugar-free jam: I love a fig jam for this recipe or my Quick Spiced Apricot Jam. It's delicious. But consider my Instant Pot Apple Butter or Rhubarb Compote.
