Ingredients & Notes

You only need a few simple ingredients to make this great side dish.

- Microwaved plantains: Sweet plantains (ripe ones with black spots) give this dish a naturally sweet taste and smooth texture. When briefly microwaved in their own skin and wrapped in a wet paper towel, they are steamed and become deliciously soft in minutes. Get enough of this fruit to make my Bone Broth Breakfast!
- Bone Broth: Rich in nutrients and flavor, bone broth adds a savory depth that complements the sweet plantains beautifully. I recommend warming it up slightly before adding it to the mashed plantains for a smooth mix.
- Olive Oil: The richness of extra virgin olive oil helps achieve a creamy texture and adds healthy fats, making this dish both satisfying and nourishing.
- Garlic & Onion Powder: These simple seasonings create a fragrant, flavorful base for the mashed plantains.
- Salt: Add a pinch or more to taste for the perfect balance between the sweet and savory flavors. Always taste test and add a little bit more based on preference.
How To Make It
See the full recipe with measurements in the recipe card.

Step One (Picture 1 above) - Mash the microwaved plantains with a fork or potato masher in a medium-sized to large bowl while still fairly hot. Halfway through mashing, stir in the minced garlic, salt, onion powder, and olive oil.
Step Two (Picture 2 above) - Add bone broth to reach the desired consistency. Feel free to add a bit more bone broth for an extra creamy texture. Continue mashing until all ingredients are well combined. Taste test and adjust seasoning with more salt or black pepper if needed.
Step Three (Picture 3 above) - Serve it as a side with your favorite meal or top it with proteins like cooked chicken sausages or this Healthy Chicken Salad for a quick lunch.
Top Tips
- Bone broth: For added depth, opt for a high-quality bone broth or make your own at home. A large pot of bone broth can be a great staple in the kitchen for several recipes, like making my Warm Spiced Bone Broth Hot Chocolate or Sweet Purple Bone Broth Soup With Turmeric!
- Adjust Seasoning: Based on preference, you might like to add more salt, garlic, olive oil, or even more onion powder. Always taste test and adjust to your liking. If it's the first time making this mashed plantains recipe, use my recommended amounts in the recipe card and then adjust from there.
Variations & Substitutions
Here are a few suggestions for home cooks who like to switch things up.
- Vegan Options: Swap bone broth for vegetable broth to make this dish vegan-friendly.
- Mofongo Twist: If you're familiar with the mofongo recipe from Puerto Rico, you can use this as a base for creating a mofongo variation by adding crispy fried garlic and a little more olive oil for extra richness.
- Golden Brown Finish: If preferred, add sautéed onions in olive oil to the mashed plantains as a garnish.
- Olive oil: Butter or coconut oil can be used for a different flavor profile.
Storage
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave with a splash of bone broth for a smooth, creamy texture.
