Extra tips & tricks
- For an extra festive and tropical look: Give the glasses a sugared rim using coconut sugar.
- Best to place the coconut cream or milk in the fridge the night before to cool.
- Using coconut milk? Then only use the solid part of the milk that has congealed at the top.
- Although not necessary, you can use frozen pineapple for a frostier experience.
- Always taste test so you can increase the level of sweetness by adding a touch of maple syrup if preferred.
- Serving a larger crowd? Just double or triple this recipe.
- Chill the glasses while making the drink for an immediate cold experience.
- Add only one or two ice cubes max if you use fresh pineapple. It adds a chilling factor without diluting the pureed fruits too much.
- If you want to make it super festive, serve it with coconut whip cream on top.
