Ingredients

Avocado Coconut Lime: 6 popsicles

Kiwi Basil Lemon: 8 popsicles

  • 2 sweet kiwis about 180 grams, peeled
  • 7 Fresh Basil leaves
  • 2 ½ tablespoons lemon juice juice of 1 big lemon
  • 1 can coconut milk 13.5 FL oz/400 ml
  • cup Monk fruit sugar or Erythritol or Swerve

Coffee-Chocolate Flavored: 6 popsicles

  • 1 can unsweetened heavy whipping cream or whipped cream alternative (you can also use mascarpone cheese or coconut cream) (about 1 ¼ cups) 10oz/283 grams
  • ¼ cup black brewed coffee 55 ml
  • ¼ cup Monk fruit sugar or Erythritol (sugar substitute) 55 grams
  • ¼ teaspoon cinnamon powder
  • 2 teaspoon unsweetened cacao powder
  • 2 tablespoons unsweetened cashew or almond or macadamia milk

Instructions

To Make One of the Popsicle Recipes above:

  • In a high-speed blender, blend all ingredients until smooth.
  • Then, prepare a 6 or 8-cavity individual ice pop mold, depending on the recipe.
  • Fill the ice pop molds, and place a popsicle stick in the center of each mold.
  • Immediately store in the freezer for at least 2 to 3 hours to set (preferably let it sit overnight)
  • Only release the individual popsicles from the mold when ready to enjoy one.
  • Keep in the freezer for up to 1 month.
