Use large & ripe sweet plantains. Cut off the ends but leave the peel on.

Note

With a pairing knife, cut lengthwise into the plantain, but don't cut all the way through.

Then

Wrap the fruit in a paper towel and wet it with water. Place in the microwave for 3 to 5 minutes.

Then

Use a towel to remove from the microwave then unwrap the paper towel and open the peel of the fruit—be careful it will be hot.

When ready...

Let it cool a bit before handling. Then carefully remove the peel and discard.

If too hot...

Place peeled plantain on a plate or bowl, cut side facing up. Now it's ready for your favorite toppings.

Now the fun begins...

Coat with a drizzle of coconut oil. Top with hemp, pumpkin, sesame seeds, nuts, sunflower kernels, nut or seed butter, apple butter, or yogurt.

Fun and filling options...

Coat with a drizzle of olive oil. Top with hemp & sesame seeds and slide a fried egg on top. Serve with a fruit salad of avocado, kiwi, and apple.
