Chocolate Mascarpone Sandwich Cookies

What do you do with mascarpone cheese?  You make sandwich cookies, of course with a creamy chocolaty filling. A perfect treat to amuse your weekend!

Get all your recipe ingredients to make the cookies

Mix butter, coconut sugar, and maple syrup until fluffy. Then incorporate egg and cinnamon. Lastly spoon in the flour and cocoa or cacao powder.

The dough should be light and fluffy but sticky to the touch.

Roll into balls by the tablespoon full. Place on prepared baking sheet, flatten at the top into a disk shape. Bake for 15 min at 375°F/190°C. Cool them before adding the filling.

When cookies are cooling down, get the ingredients to make the mascarpone filling.

Combine melted chocolate with mascarpone cheese. Place in a piping bag, pipe a tablespoon of the filling onto half of the cookies. Press lightly another cookie on top.

Chill the cookies for 30 minutes or until mascarpone filling is set.

When ready to serve, sprinkle with powdered sugar for a contrasting effect—optional.

Serve them with your favorite cup of hot drink or as a dessert.
